Curry is an awesome meal to make for the busy & health conscious. Curry is forgiving- you can use whatever protein you have on hand e.g. Tofu, chicken, even beef-- beef curry is the delicacy of the Indian Gods! Veggies and starch are free variables too, so for the shopper who doesn't plan, it’s an a perfect add-in. The only constant really happens to be the curry powder, which you can have ready-mixed or you can make yourself. For Baobei and I, we buy ready-mixed curry powder, because why do that work yourself? Of course, some people have their own preferences, and you can always find easy-to-make recipes online for curry powder from the individual ingredients. Simple Delicious Curry
4 servings
Spices:
3 Tablespoons curry powder
1 teaspoon tumeric
1 teaspoon cumin
1 teaspoon hot paprika
a pinch of cloves
a couple slices of ginger
1 tablespoon oil
Meat: ~1 lbs of chicken
Veggies:
1 medium onion
2-4 cloves of garlic
1 can of crushed tomatoes or ~4 tomatoes
1 bell pepper
5 medium carrots
3 celery sticks
Starch: Rice (4 servings)
Add some caraway seeds for fun!
First fry the spices (oil, curry powder, turmeric, cumin hot paprika, cloves, ginger) ca. 5 min; this will bring out their flavor. Then add the onion & garlic, sauteing until soft. Once that's ready you can add the protein. For this instance we used chicken, thinly sliced (ca. half a centimeter thin). Cutting the meat against the grain makes it more tender, since your teeth will be oriented with the meat's naturally occurring fracture lines when chewing. Brown the chicken, and add the tomatoes and veggies, adding water if necessary to cover everything, or to thin it out. For carrots or potatoes, you probably need to cook for 30 to 60 min, but curry is forgiving, so you can do whatever you want.

OK here it doesn't look as appetizing... but the point is, you can make it in volume!
That's important if you're busy and can't cook every day, because you can save some for later meals!
